CHICKEN IN ORANGE SAUCE!!!!

Here's the last recipe in the

CHICKEN IN ORANGE SAUCE

4 chicken breast halves 
1/4 c. flour
 Salt and pepper
 4 tbsp. margarine
 1 1/2 c. orange juice


Coat each half breast with seasoned flour. Melt margarine in pan and saute each side over medium heat until lightly browned. Add orange juice and cover. Cook about 15 to 20 minutes more on reduced heat until done. Serve over rice, if desired, with the sauce. Serves 4

CHICKEN SALAD SUPREME!!!

Welcome back to the blog!
Here is the 4th recipe in the 
chicken recipes series!


CHICKEN SALAD SUPREME

2 lg. chickens (3 to 4 lb. each to make 6 to 8 c. cooked meat)
 4 tbsp. salad oil 
4 tbsp. orange juice 
4 tbsp. vinegar 
 2 tsp. salt 
3 c. mandarin oranges
2 c. pineapple chunks 
3 c. green grapes
 Slivered almonds 
3 c. diced celery 
2 1/2 c. raw rice 
1 qt. mayonnaise

Cut chicken into pieces and boil until tender with no seasonings. Remove skin and fat first. Remove meat from bones and cut into cubes. Mix together oil, orange juice, vinegar, salt, marinate chicken in this mixture in refrigerator overnight. Drain fruit well, add to nuts and celery the next day; add to chicken mixture. Cook rice until tender in boiling water, drain, blanch with cold water, drain well; add to chicken mixture. Add mayonnaise, mix well. Serve with crackers and lettuce or in pocket bread.

BUFFALO-STYLE CHICKEN WINGS!!!

Welcome back! 
this is the third
 recipe in the
chicken recipe
 series! 


BUFFALO-STYLE CHICKEN WINGS 


2 1/2 lb. (12-15) chicken wings 
1/4 c. Durkee red hot sauce
 1 stick (1/2 c.) melted butter or margarine 
Celery sticks
 Blue cheese dip 


Split wings at joint and discard tips.  Arrange on a rack in a roasting pan.  Cover wing pieces with sauce on both sides.  Bake at 425 degrees for 1 hour, turning halfway through cooking time.  Wings can be deep fried at 400 degrees for about 12 minutes and then dipped into the hot sauce until coated completely.  Serve with celery and blue cheese dip.

CHICKEN WALNUT !!!

Hey everyone its time for 
recipe #2 in the chicken
recipes series! Let's Go!!


 CHICKEN WALNUT :


 1 lb. chicken boned breast
 2 tbsp. cornstarch
 1/2 tsp. ground ginger
 1/4 tsp. garlic powder
 1 tsp. sugar 
4 oz. bamboo shoot
s 3 tbsp. soy sauce 
1/2 tsp. salt 
2 tbsp. butter 2 tbsp. soy sauce
 1/4 c. apple juice



 Combine, cornstarch, ginger, garlic, sugar and salt.  Roll chicken in mixture.  Brown chicken in butter and combine 2 tablespoons soy sauce, one half-cup water and one quarter cup apple juice.  Pour liquid over browned chicken.   


Cover and simmer 20 minutes or until fork tender.  Stir once, add bamboo shoots.  Combine one quarter cup water, one quarter cup apple juice and 3 tablespoons soy sauce with cornstarch mix.  Left over, add to chicken stir until thick.  Serve hot garnished with French fried walnuts.  Make by heating one half cup or more walnuts in boiling water five minutes.  Remove skins, dry and fry until brown.

HONEY SPICED CAJUN CHICKEN!!!

This weeks agenda is the Chicken recipes series!:



HONEY SPICED CAJUN CHICKEN: 


Paul Prudhomynes seafood magic 
10 oz. pounded chicken breast
 Cooked linguini 
3 sliced mushrooms
 1 diced tomato 
2 tbsp. mustard
 4 tbsp. honey
 3 oz. cream 



Pat the chicken in the seasonings, then in a very hot fry pan; sear the chicken on both sides until it is done.  Take chicken, slice, put back in pan with a little oil, the diced tomato and mushrooms for 2 minutes.  Add the honey, mustard and cream.  Cook for 5 minutes at medium heat.  toss in linguini.  Serves 2.

HAMBURGER STROGANOFF

Welcome back to the blog everyone! This is
the last recipe in the beef recipe series! Enjoy!


1 lb Lean Ground Beef
 1/2 c Onion; Chopped,
 1 med 1 Clove Garlic; Minced
 1 tsp Beef Bouillon; Instant 
3/4 tsp Salt
 1/4 tsp Pepper 
4 oz Mushroom Stem/Pieces;Drained
 1 c Water 
1 c Dairy Sour Cream 
2 c Noodles Or Rice; Cooked, Hot
 3 tbsp Unbleached Flour 




Cook and stir the Meat, onion, and Garlic in a large skillet until the Meat is brown. Drain off the excess fat. Mix in the flour, bouillon, salt, pepper and the can of mushroom stems and pieces. Stir in the water and heat to boiling, reduce the heat and simmer, covered, for 10 minutes. Stir in the sour cream and heat until just Hot. Serve over the noodles or Rice, if desired, add a garnish of chopped parsley.

BEEF TACO SALAD!!!!

Hello Everyone here is
the 4th recipe in the series:



BEEF TACO SALAD!!!




1 lb Lean Ground Beef
  1 Package Taco Seasoning Mix 
 1/2 tsp salt 
1 medium yellow onion, chopped
 1 14.5-oz can Mexican-style diced tomatoes, undrained 4 to 6 cups 
 1 c Shredded Cheddar Cheese
 shredded lettuce
 Sliced green onions
 Chopped green, red or yellow bell pepper 
Molded Taco Bowl Shell (optional)

    
Break ground beef into crumbles and cook in large skillet over medium heat about 8-10 minutes or until meat is done, breaking up into crumbles. Add yellow onion for the last 2-3 minutes of cooking. Drain excess grease if needed.
   
Next, add the seasoning mix and salt. Stir in tomatoes and bring to a boil. Reduce heat; let simmer about 10 minutes, stirring occasionally.   


Distribute lettuce among 4 plates or Bowl Shells. Top each one with the beef mixture. Next, sprinkle with bell pepper, green onions and cheese

EASY BEEF BAKE

EASY BEEF BAKE!!!

Hello everyone here is the 3rd recipe
in the beef series! Easy Beef Bake:


1 pk Onion and mushroom or Beef Flavor mushroom Soup mix
 1/4 c Ketchup
 1 med Egg
 1/4 c Water 
3 c Hot mashed potatoes
 1 lb Ground Beef
 Shredded Cheddar Cheese
 1/2 c Soft Bread crumbs   




Preheat oven to 350 degrees.In a medium bowl,combine Soup mix, water,Beef,Bread crumbs,ketchup and Egg.Press Beef mixture into a 9" Pie pan.Bake at 350 degrees for 40 minutes.

EASY CHEESY SLOPPY JOES!!!

Welcome to the second day of beef recipes! I hope you enjoy!

EASY CHEESY SLOPPY JOES!!!

1 lb Ground Beef
 1 tsp salt
 Sprinkle with pepper
 ½ c. chopped onion
 1 c. Ragu Double Cheddar Cheese Sauce 

  
Brown ground beef until done, add chopped onion and cook 2- 3 min more. Drain excess fat if needed.  Add about 1 cup of Ragu Double Cheddar Cheese sauce and stir over low heat until cheese bubbles. Serve on buns (toasted is best).

STRAGANOFF BUNDLES!!!!

STRAGANOFF BUNDLES


1 tsp Worcestershire Sauce
 1 1/4 lb Ground Beef
 1/8 tsp Garlic salt
 1 med Green pepper, chopped
 1/2 Of a 17 1/4 oz package 1 med Onion, chopped
 1 sheet Frozen puff pastry, (thawed)
 1 med Carrot, shredded
 8 oz Sour cream
  1 7 1/2 oz. can semi condensed Cream of mushroom Soup 
2 tsp Flour 


  In a skillet cook Beef, green pepper, onion, and carrot till Meat is brown and onion is tender; drain off fat. Combine 1/2 cup of the sour cream, flour, worcestershire Sauce, and Garlic salt. Stir into Meat mixture.
   
Roll puff pastry into an 18x12 inch rectangle.Cut into six 6-inch squares. Spoon about 1/6 of the filling into the center of each square. Moisten edges of squares. Fold all 4 corners of each square to center. Seal edges by crimping. Place in an ungreased shallow baking pan. Bake in at 375 degrees about 25 minutes or till golden.
  
Meanwhile, make the Sauce. Combine the Soup and remaining sour cream. Heat through over low heat. Spoon Sauce over bundles.
